Where most plants die in cold salty sea winds, sea kale flourishes; this protected species grows naturally along the coastline. Mathilde Nakken developed an innovative breeding program that celebrates this taste of Dutch heritage. A newly developed concrete structure strengthens the dike and at the same time provides ample growing ground for this sea kale, allowing for a new form of saline agriculture.
